Traditional Sardinen Curry of Kerala (Nadan Mathi Curry)

Ingredients.
Sardinen 1 Kg.
Green chillies. 5 nos. split lengthwise.
Curry leaves 1 sprig.
Vegetable oil 2 tbsp.
Salt to Taste.
Kudampuli (cambogia) 2 pieces
Ingredients for the gravy paste.
Chilli powder 2 tsp.
Coriander powder 1/2 tsp.
Turmeric powder 1/2 tsp.
Shallots 10 nos. (or onion medium sized 1 nos. )
Water 2 tbsp.
Mix all the ingredients to a fine paste.
Preparation.
Clean the sardinen, remove the scales, head and wash.
Cut each sardinen into three pieces each.
Press or drain out the excess water from the fish pieces.
Put the sardinen pieces in a pan, add the gravy paste and mix well.
add green chillies, salt kudampuli (cambogia) pieces and water till all the sardinen pieces are covered with water.
Cook on medium flame for 15 minutes or till the gravy reaches the required consistency.
Mix in the curry leaves and a tablespoon oil and cook for two more minutes
Take from the flame and can be served.
If you can get good quality cambogia the curry can be preserved for days even outside the fridge.
