Potato Curry. 

Ingredients. 

Potatoes 500 gram. 

Onion 2 medium ones. 

Turmeric powder 1/2 teaspoon. 

Chilli powder 1/2 teaspoon. 

Ginger paste 1 Tablespoon. 

Oil 2 Tablespoons. 

Mustard seeds 1 teaspoon. 

Red chilli dried 1 nos. 

Salt to taste.   


Preparation. 

Wash, clean, peel and dice the potatoes to small pieces.  Boil water and cook the potato pieces till tender.  Drain the water and keep the potatoes for later. 

Peel the onions and slice them finely. 

Put the turmeric powder, chilli powder and the ginger paste in a small bowl and form a fine paste adding some water.  

Now heat oil in a pan, add the mustard seeds and allow to splutter.  

Add the sliced onions to the oil in the pan and saute till the onions become transparent and golden brown.

Now reduce heat to low and add the spice paste and salt and mix well.  Saute for a minute and add the cooked potatoes and mix well.

Add enough water as needed to achieve the desired consistency.

This potato curry can be served along with rice, dosa, appam, chapathi or any other bread varieties.  It may be delicious with toast bread. Try it once.
