Egg Curry

 If you like to prepare a simple, tasty and nutricious side dish for your breakfast, lunch or dinner Egg Curry is the best choice. it can be served along with rice, Dosa, Appam Chappathi, and other varieties of bread.

Ingredients for Egg Curry (Serves 4)

1. Boiled Eggs  4 nos

2. Onions sliced 2 nos

3. Tomatoes chopped 2 Nos

4. Garlic paste  1/2 tsp

5.  Ginger paste 1 tsp

6. Coriander powder 2 tsp

7. Turmeric powder  1/2 tsp

8. chilli powder  1/2 tsp 

9. Salt to taste

10. Yogurt 1 Tablespoon

11. Oil 2 Tablespoons

12. Mustard seeds 1/2 tsp

12. Cilantro or Corianderleaves to garnish

Preparation of Egg Curry.

Peel the boiled eggs, slice each one into two and keep aside.

Make a paste with the ingredients 4 to 9 adding enough water.

Heat oil in a pan, add the mustard seeds, allow them to splutter.

add the sliced onions and saute till till its colour changes and is cooked.

Add the paste to the sauted onions in the pan and saute for a few minutes stirring well.

Add the tomatoes and cook stirring well till the tomato is cooked and they form a fine paste.

Add enough water to the pan to reach the desired consistancy.

Now add the yogurt to the mix, mix well, take the pan from the herd and gently add the sliced eggs to the prepared gravy.

Garnish with chopped coriander leaves and serve warm.
