Shahi Rice
Basmati rice 500 gm
Ghee/butter 2 TbspShah Jeera ½ tsp
Cloves 10 nos.
Cinnamon stick a small piece
Cardamom 5 pods
Green chillies split 5 nos
Bay leaves a few
Cashew nuts split 2 Tbsp
Raisins 2 Tbsp
Paneer cut into cubes 50 gm
Boiled green peas ½ cup
Cherries cut into halves 10 nos
Milk 100 ml
Saffron a pinch
Preparation
Heat milk and add saffron strands to
the milk and keep aside.
Wash and rinse the basmati rice and
cook adding one litre water and keep aside.
Heat butter/ghee in a pan and fry
the cashew nuts and raisins and remove from the pan and keep aside.
Now add shah jeera, cloves, cardamom
pods, cinnamon, green chillies and bay leaves and allow to crackle.
Add paneer cubes and boiled green
peas to the pan and mix well.
Add the rice and saffron milk,
cashew nuts, raisins and mix gently.
