Ullitheeyal is a special south Indian preparation which forms a part of the famous Kerala sadhya. It is prepared using the special indian shallots, ginger and tamarind as the main ingredients.  Fried coconut is also an inevitable ingredient for making theeyal.

Ingredients for ullitheeyal

Indian shallots 250 gm.
Grated coconut 1 cup
Dried red chillies 4 nos.
Coriander powder (whle coriander) 2 tsp
Green chillies split 5 nos.
Tamarind paste 2 Tbsp.
Water ½ cup
Oil 2 Tbsp

Preparation of Ullitheeyal

Dry-fry grated coconut adding dried chillies and the whole coriander till the grated coconut reaches a golden-brown colour.  Remove from heat and allow to cool.  When cool grind it to a fine paste and keep aside.

Clean, peel and slice each of the shallots into two.

Heat oil in a pan, add green chillies and onion and saute till the onions are cooked.  Add salt, tamarind paste diluted (dissolved) in water and cook for a few minutes.

When done add the ground coconut paste to the onion and mix well.  Add water and salt if required and allow to boil.

Remove from heat and serve.
