Tomato Vinthalu
 
Ingredients for Tomato Vinthloo

Tomato ½ kg.
Kashmiri chilli powder 3 tbsp.
Turmeric powder ½ tsp.
Ginger finely chopped 1 tsp.
Garlic chopped 1 tsp.
Onion chopped 2 nos.
Vegetable oil 4 Tbsp.
Mustard seeds 1 tsp.
Vinegar 1 Tbsp.
Tomato sauce 2 Tbsp.
Sugar 1 tsp.
Curry leaves 1 sprig
Salt to taste

Preparation of tomato vinthaloo

Remove the skin from the tomatoes and cut into small pieces and keep aside.

Heat oil in a pan, add mustard seeds and allow to splutter, add the chopped onion and sauté well till golden brown, add turmeric powder and ground masala and chopped tomatoes and sauté finely. 

Add chopped ginger and garlic, 1 Tbsp vinegar and sauté well

Add tomato sauce, salt and sugar, mix well and remove from heat.

Garnish with coriander leaves.
