Tea Cake

A fine snack to serve along with 4`Oclock coffee or tea.

Ingredients for Tea Cake.

All-purpose flour 250 gm/1 cup
Baking powder 1 tsp.
milk 100 ml
Butter 250 gm
Sugar 250 gm.
Egg yolks 4 nos
orange peels finely sliced 1 tsp
Egg whites 4 nos.
Vanilla beans 1 (split, scratch out the pulp using a spoon and dissolve in water).
Sugar 1 Tbsp
Salt a pinch

Preparation of Tea Cake

Mix all purpose flour and baking powder together.(fine results can be achieved if you use a sieve and sieve the mixture two times).

Beat butter and sugar together in a bowl.
Add egg yolks one after another and beat together, add the orange peels, add the flour and milk in portions and beat together into a fine batter.

Beat the egg whites together with the vanilla essence till it foams.  Add 1 Tbsp sugar and fold into the batter.
Grease a cake tin with butter and spread the batter and bake for 45 minutes at 180°c.  When done remove from heat and allow to cool.
