Spinach Cutlet

Ingredients for Spinach Cutlet

Spinach finely chopped 500 gm.

Potatoes boiled and mashed 250 gm.
Green chillies finely chopped 5 nos.
onion finely choppe 2 nos.
Garlic finely chopped 1 Tbsp
Ginger finely chopped 1 Tbsp.
Pepper powder 1 tsp.
Salt to taste
Eggs 1 nos.
Bread crumbs 200 gm.
Oil to fry

Preparation of spinach cutlet

Boil, peel and mash the potatoes and keep aside.
Heat one Tbsp. oil in a pan and saute ginger, garlic, green chillies and onion adding enough salt.  now add the chopped spinach and saute well. When cooked add pepper powder, cardamom powder and mashed potatoes, mix well and allow to cool.
Make small balls out of the mixture.
Beat the egg in a bowl till fluffy.  Dip the cutlet balls first in the egg and then roll it in bread crumbs and deep fry them till golden brown.
Serve the spinach cutlets along with coffee, tea or as a starter.
