Prawns Curry with Fried Coconut (Chemmeen Theeyal)
Ingredients

Prawns peeled and cleaned 500 gm
grated coconut 1 cup
dried red chillies 5 nos.
cumin seeds 2 tsp.
coriander 100 gm
Vegetable oil 1 Tbsp.
Small shallots 200 gm
Tamarind paste 1 Tbsp.
Mustard seeds 1/2 tsp.
Salt to taste
Curry leaves 1 Sprig.

Preparation of Chemmeen Theeyal.

Heat 1 Tbsp oil in a pan and fry grated coconut, cumin seeds, coriander seeds and red chillies and fry till the coconut reaches golden brown colour.  Remove from heat, allow to cool and grind to a fine paste and keep aside.

Heat 2 Tbsp oil in pan and add mustard seeds and allow to pop, add choppe shallots and curry leaves and saute till golden brown.  Add the ground paste, salt and enough water and mix together.
Add the prawns and boil till cooked and add the Tamarind paste dissolved in water, mix well, allow to boil and remove from heat.
