Stir-fried Eggs with Carrot and Paneer

 

Ingredients

Egg 1 nos.
Paneer 250 gm
Shallots chopped 1 tbsp.
Mustard seeds ½ tsp
Urid dal ½ tsp
Curry leaves 2 sprigs
Grated coconut 1 cup
Cumin seed powder ¼ tsp
Turmeric powder 1/8 tsp
Garlic chopped 3 cloves
Carrots grated 4 nos
Green chillies chopped 4 nos
Coconut milk 2 tsp
Water 2 tbsp
Salt to taste

Preparation

Stir-fry the egg and keep aside.

Grind the grated coconut along with cumin seed powder, turmeric powder and garlic.  Transfer it ti a cooking vessel and add chopped chillies, grated carrots, water, coconut milk and salt and cook on medium flame.  When cooked add the stir-fried egg.
Heat oil in a pan and add mustard seeds and allow to splutter.  Add urid dal, shallots and curry leaves and fry them.  When done season the curry pouring the mix over the curry and mixing it
