Mixed Vegetable Thoran
Ingredients
Cabbage, carrots, beans,and onions finely chopped 150 gms. each
grated coconut 250 gm.
Green chillies finely chopped 8 nos.
Curry leaves 1 sprig.
Salt to taste
Mustard seeds 1/2 tsp.
Oil 2 Tbsp.
Preparation
Heat oil in a pan. Add the mustard seeds and allow to splutter. Add curry leaves, chopped green chillies and onion and saute well. Now add the grated coconut, chopped vegetables, salt and water, mix well and cook for 5 minutes with the lids closed. After 5 minutes remove the lid and cook on low flame till the excess water evaporates and the thoran become dry.
Remove from heat and serve along with rice, naan, chappathi or any sort of bread.
