Chicken with Mushroom and Bacon
Ingredients
Chicken breasts 500 gm.
Garlic 1 cloveGreen chillies split 1 nos.
Cream 200 ml.
Chicken stock 100 ml.
Cognac 100 ml.
Mushrooms 250 gm.
Raisins 100 gm.
Bacon 100 gm.
Flour 2 Tbsp.
Olive oil 2 Tbsp.
Butter 2 Tbsp.
Salt, Pepper, Red chilli powder, Thyme and parsley as per taste.
Preparation.
Mix the chicken breasts with some salt
and pepper powder and apply the flour to it. Heat some butter in a pan and fry
the bacon in it till crispy and keep it aside.
In the same pan fry the sliced mushrooms adding some salt and thyme and keep
it aside. Add some more butter and oil to
the same pan, add the chopped garlic and chopped green chillies and saute for half
a minute. Now place the chicken breasts in
the pan and fry them on both sides. When
both sides of the chicken breasts are sealed remove them from the pan place them
in a baking pan. Preheat the oven to 180°c
and bake the chicken breasts till cooked. Place a pan on the stove, add the raisins and cognac
and allow to boil, add the chicken stock and allow to boil. Now add the cream and mushrooms, mix well and heat
a little. Season the mushroom sauce with
salt and pepper as per taste.
Arrange the chicken breasts over the
mushroom sauce and garnish it with fried bacon and parsley.
Serve along with noodles, fried rice,
fried potatoes or toasted bread.
