Carrot vattayappam

Ingredients 

Rice 250 gm
Sugar 1 tbsp
Yeast ½ tsp
Lukewarm milk 200 ml
Cooked rice ½ cup
Grated coconut ½ cup
Sugar 1 cup
Cardamom 15 pods crushed
Cumin seeds ¼ tsp
Cashew nuts 2 tbsp
Raisins 2 tbsp
Carrots 2 nos
Salt to taste

Preparation

Mix the yeast and 1 tbsp sugar in milk and allow to raise for half an hour.
Soak rice for 8 hours, wash, rinse it and grind in a mixer grinder adding yeast milk and the cooked rice.
Now add sugar and grated coconut and salt and grind coarsely.
Transfer to a deep vessel and allow to raise for 8 hours. When raised add cardamom powder, grated carrots and cumin seeds and mix together.
Now transfer the batter into trays greased with butter, garnish with raisins and cashew nuts and steam cook for at least 45 minutes.
Remove from steamer and allow to cool.
When cooled the appams can be easily removed from the trays.
