Carrot halwa
Ingredients
Carrot 1 kg
Cashew nuts 4 tbspRaisins 4 tbsp
Sugar 500 gm
Milk 2 litre
Cardamom pods 8 nos
Butter 250 gm/ml.
Salt a pinch.
Preparation
Clean, peel, grate and cook the
carrots and keep aside. Heat butter in a
thick bottomed pan, fry the split cashew nuts and raisins, add milk, sugar,
crushed cardamom pods, carrots and rice flour and cook on low flame till all
the milk is drained and oil comes visible.
Transfer the halve to a dish, cover
it with a plastic paper/parchment paper and apply some pressure over it for the
next 24 hours. ( a vessel filled with 3-4 litre water can be used as weight)
