Beef with
vegetable rice
Vegetable are always healthy, but
combined with beef and rice it becomes a wholesome lunch
Ingredients
Beef cut into small pieces 750 gms
Salt to taste Pepper powder 1 tsp
Lemon juice 2 tbsp
Garlic finely chopped 2 tbsp
Green chillies 8 nos
Onion finely chopped 4 nos
Tomato sauce 2 Tbsp
Beef stock 750 ml
Capsicum deseeded and cut into pieces 2 nos
Carrots peeled and cut into pieces 2 nos
Green peas 200 gms
Beans cut into pieces 150 gms
Mushrooms sliced 200 gms
Cilantro (coriander leaves) chopped a bunch
Basmati rice 500 gms
Butter 1 tbsp.
Preparation
Mix the beef with salt, pepper
powder and lemon juice and allow to marinate for at least 1 hour.
Heat w tbsp. oil in a pan and saute
the beef till all the sides are sealed or till the colour changes to
brown. Now cook the beef adding 1 litre
water till it becomes tender.
Now separate the beef from the water
/gravy and keep the water aside.
Heat oil in a pan, add garlic, green
chillies and onions and saute well till the onion reaches golden brown
colour. Now add the chopped tomatoes and
saute well. Add tomato sauce, cooked beef and beef stock (water from the cooked
beef) and bring to a boil.
Wash and rinse the rice. Heat butter in a vessel and add the rice and
saute for few minutes stirring well. Add 1litre water and cook for 5 minutes on
low flame. Add the vegetablesand cook on
low flame stirring occasionally till it reaches the required consistency.
Remove from heat and serve it warm
garnishing the rice with cilantros/coriander leaves.
