Egg plant Raita

 
Ingredients

Egg fruits 250 gms
Salt a pinch
Yogurt 500 ml
Salt to taste
Oil 100 ml
Chilli powder ½ tsp
Turmeric powder ¼ tsp
 
For seasoning

Mustard seeds ½ tsp
Shallots chopped 1 tbsp
Dried red chillies 2 nos
Oil 2 tbsp
 
Preparation

Cut the egg fruits into 1 cm thick round slices.  Make a paste of salt chilli powder, and turmeric powder and mix the egg fruit slices with it.

Heat oil in a pan and deep fry the eggfruit pieces till soft.

Mix the yogurt and salt well. Arrange a layer of the fried egg fruit pieces in a serving tray and spread some yogurt over it. Then arrange a second layer of eggplant pieces followed by yogurt and spread it evenly in the tray.


Pour the seasoning over the eggfruit yogurt preparation and serve.
