Beef Achar
Ingredients
Beef 500
grams
Meat masala
1 tbsp.Vinegar 200 ml
Chilli powder 2 tbsp
Cumin powder ½ tsp
Fenugreek seeds dry roasted and ground 1 tbsp
Ginger finely chopped 100 grams
Garlic cloves split into two 50 grams
Green chillies chopped 5 nos
Curry leaves chopped 2 sprig
Mustard seeds ½ tsp
Salt to taste
Oil as needed (about 500 ml)
Preparation
Cut the
beef into 2 cm large cubes. Add meat
masala and salt to it and allow to marinate for an hour.
Heat oil in
a pan and deep fry the marinated beef on low heat and keep aside. (you may also half cook the beef and then fry
it, then the taste will be a bit
different as the fresh fried beef)
Heat 150 ml
oil in a pan, add the mustard seeds and allow to pop, add the ginger and
garlic, curry leaves and green chillies and sauté well. When done add chilli powder, cumin powder and
vinegar, reduce heat, add fried meat, mix well and remove from heat.
Allow to
cool, fill in clean glass jars and close air tight. Can be used after two three days. Better store in a fridge.
