Vendakka pachadi / Okra Pachadi/ladys Finger Pachadi.


 

Ingredients

 

Okra/Lady’s finger 250 grams

Green chillies 5 nos

Dried red chillies 3 nos

Mustard seeds ½ tsp

Curry leaves 1 Sprig

Grated coconut ½ cup

Cumin seeds ½ tsp

Yogurt 250 ml.

Salt to taste

Oil as needed

 

Method of Preparation

 

Slice the okra/lady’s fingers and green chillies finely and fry them mildly in a pan adding enough oil and keep aside.

 

Grind the grated coconut and cumin seeds to a fine paste.

 

Heat oil in a pan and add mustard seeds, red chillies and curry leaves.  When done add the ground coconut paste and enough water and mix well and bring to a boil.  Add salt as needed.  Add the fried okra and green chillies and mix well.  Pour the yogurt into the pan, mix well and remove from heat.

 

Never allow the ingredients to boil after adding the yogurt.
