Vegetable Cutlets


Vegetable Cutlets are great as a starter, as a snack along with coffee or tea or as a side dish as it is a fine blend of vegetables and spices which is crispy also.
Ingredients
Potatoes 250 gm
Chopped vegetables comprising of green peas, carrots, beans, sweet corn 1 cup
Cilantro (coriander leaves) chopped 2 tbsp
Green chillies 2 nos (chopped)
Ginger finely chopped 1 tsp
Cardamom powder a pinch
All-purpose flour 2 tbsp.
Bread crumbs 1 cups
Pepper as needed
Salt to taste
Oil to fry

 Preparation

 Boil the potatoes till they become tender, remove from heat, peel off the outer skin and keep aside. Mash the potatoes to a fine paste.

 Cook the vegetables using a steamer and remove from heat. Now mix the vegetables with the mashed potatoes, cilantro leaves, chopped green chillies, chopped ginger, cardamom powder, salt, pepper powder and divide them into 10 parts.  Now form each part into a ball, press it in between your palms to flatten them into oval shapes. 

 In a small bowl mix the all-purpose flour with some water and salt to make a fine batter.
Heat oil in a deep pan, dip each of the vegetable cutlets in the all-purpose flour batter and then in the bread crumbs and deep fry in the hot oil till golden brown.

 If the cutlets break when frying it may be due to excess water in the mixture.  You can reduce it by adding some bread crumbs and mixing over again.

Vegetable cutlets can be served along with tomato sauce, sweet sour sauce, and various chutneys.
