Palada

Ada 250 gm. (buy the ready to use Ada from the grocer
or make fresh ada using 250 gm. Rice flour)
Water 1 ½ litre
Butter/ghee 2 tbsp
Condensed milk 500 ml
Milk 500 ml.
Sugar 500 grams
Cashew nuts 100 grams
Raisins 100 grams (optional)
Cardamom powder ½ tsp
Nutmeg powder ½ tsp (optional)
Preparation
Fry cashew nuts and raisins in butter and keep aside.
Cook ada in 1 ½ litre water adding a pinch of salt and
1 tsp butter. When cooked rinse with cold water and drain.
In a thick bottomed vessel mix cooked ada and butter
on low fire. Be careful to prevent the ada sticking together or breaks into pieces. Add condensed milk, sugar, and rice flour and
cook on low flame stirring gently. Be
careful that the ingredients may stick to the bottom of the vessel and burn.
Add cashew nuts, raisins, and cardamom, nutmeg powder and remove from fire.
Allow to cool stirring occasionally.
