Naan

Naan is one of the famous Indian breads along with poori, chapathi, paratha and the like.  It is offered in each and every Indian restaurant throughout the world.

Ingredients for making naan

All-purpose flour 250 gm

Water Lukewarm 125 ml

Melted butter 50 gm

Yogurt 4 tbsp

Honey 1 tbsp

Yeast ¾ tsp

Salt to taste

Black caravey/ kalonji seeds ¼ tsp

Preparation of naan

Combine lukewarm water honey and yeast in a non-metallic bowl and allow to stay for 10 minutes.

Now mix flour and ¼ tsp salt in a bowl, add half of the butter, yogurt and yeast water and knead together till the batter becomes soft.  If you feel like add a bit more water or flour to keep the consistency.

When the dough becomes soft enough form a ball of it and place it in a vessel and cover the vessel with a wet towel or linen cloth and allow to stay for at least 1-2 hours at a reasonably warm corner in the kitchen.

During this time the dough expands to double its size.  Now punch it back.  Divide the dough into 4-6 balls of equal size.

Preheat oven to maximum.  Flatten each of the dough balls 1-1.5 cm thick oval shapes.  Place each one in the oven and cook for 2-3 minutes on each side turning it.

Brush some butter over the Naans and sprinkle with Kalonji seeds.

Serve with curries and a pickle.
