Green
gram bittergourd curry
Green gram/
Mung bean ½ cup
Bitter
gourd sliced ½ cup Grated coconut 1 cup
Green Chili 4 nos.
Dried red chili 2 nos.
Ginger chopped 1 tablespoons
Fenugreek seeds ¼ tsp
Turmeric powder ¼ tsp
Tamarind paste 1 teaspoon
Salt to taste
For
seasoning
Oil 2
tablespoons
Mustard
seeds ½ tsp. Garlic cloves chopped 4
Curry leaves 1 spring
Method of
preparation
Soak the
green gram in water for a minimum of three hours and cook it adding enough
water until it becomes soft, and keep aside.
Cook the
sliced gently adding some water and salt. Don't overcook, otherwise
it may lose its green colour.
Dry roast
fenugreek seeds, and grind it along with green chillies, grated coconut,
turmeric powder, chopped Ginger and tamarind paste.
Boil the
ground paste in a pan adding enough salt and water. When the paste begins
to boil add the cooked mung beans/ green gram and bitter gourd and cook for a
few minutes and remove from heat.
Heat oil in
a pan, add mustard seeds allow to splutter, add broken red chillies, garlic
cloves and curry leaves sauté well and add to the curry and serve.
