Garlic achar


 

Ingredients

 

Garlic 500 grams

Ginger chopped 1 Tbsp.

Chilli powder 1Tbsp.

Green chillies chopped 1Tbsp

Curry leaves 1 Sprig

Vinegar 2 Tbsp.

Sugar 1Tbsp

Mustard seeds ½ tsp

Fenugreek seeds ½ tsp

Salt to taste

Oil as needed

Water boiled 250 ml

 

Preparation

 

Heat 2 tbsp oil in a pan, add Mustard seeds and fenugreek seeds and allow to splutter.  Add chopped ginger, green chillies and curry leaves and saute well.  When they change colour, add the peeled Garlic cloves and sugar and mix well.

 

Now add the chilli powder, salt and water and allow to cook for 5-10 minutes.

Remove from heat, add vinegar and allow to cool.

Fill in suitable jars and keep in fridge for later use.
