Duck Roast
We all of us are familiar with various
preperations with chicken meat. But when it comes to duck-meat many of us are
at loss. Here comes a delicious duck – special which I found in net and adapted
a little bit to suit my taste.

Ingredients
Duck meat – cut into pieces

1 kg

Chilli powder
|
1 tsp
|
Turmeric powder
|
½ tsp
|
Curry leaves
|
1 spring
|
Ginger – chopped
|
1 tbsp
|
Gallic – chopped
|
1 tbsp
|
Turmeric powder
|
½ tsp
|
Chicken masala powder
|
3 tsp
|
Onion chopped
|
2 Nos
|
Green chillies – split into two
|
8 Nos
|
Vinegar or lime juice
|
1 tbsp
|
Coconut milk
|
200 ml
|
Salt
|
To taste
|
Oil
|
To fry (ca. 100 ml)
|
Preparation
Mix the duck eat pieces, vineagar, turmeric
powder and salt and allow to marinate for minimum one hour. Heat oil in a pan
and fry the duck pieces on both sides till brown. Frying gives the meat a
certain firmness. Take off from the pan and keep aside.
Now add chopped onions, ginger, garlic, curry
leaves and green chillies saute till onions becomes golden brown. Add chilli
powder and chicken-masala and mix well. Add duck pieces, 500 ml water, and mix
well. Cook for a further 30-40 minutes keeping the pan covered with the lid
closed. Add coconut milk mix well, allow to boil once more and remove from
heat.
