Cucumber Kichadi / vellarikka kichadi


 

Cucumber Kichadi is one of the main side dishes of the Kerala sadya.  The main ingredients are cucumber and yogurt.

 

Ingredients

Cucumber (peeled, deseeded and cut into small pieces) 2 cups

Yogurt 1 cup

Green chillies chopped 5 nos

Shallots 5 nos

Grated coconut 1 cup

Cumin seeds ½ tsp

Mustard seeds ½ tsp

Curry leaves 2 sprigs

Oil 2 tbsp.

Salt to taste

 

Preparation

Grind coconut, shallots, cumin seeds in a mixer grinder.  Crush the mustard seeds using a mortar-pezil and add to the ground coconut

 

Cook the cucumber in a vessel adding enough water, salt and the chopped chillies.  When the cucumber pieces become tender add the ground coconut mix and join together.

 

Remove from heat and mix the yogurt to the cooked cucumber

 

Seasoning:  heat oil in a pan, add mustard seeds and allow to splutter, add broken red chillies and curry leaves, fry for a minute and pour over the finished kichadi.
