Chilli con carne is a spicy stew which has its
origin jn Spain. The main ingredients are chilli, meat, tomatoes and
beans. According to the availability of ingredients and taste variations
chilli. Con carne is prepared in various ways with slightly different tastes.
Ingredients
for cooking chilli con carne
Onion
chopped 1 nos.
Capsicum
red 1 nos.
Garlic
chopped 4 cloves
Paprika
powder 1 tsp.
Cumin
seed powder 1 tsp.
Chilli
powder 1 tsp
Minced
beef 500 gm.
Tomatoes
peeled and chopped 500 gm.
Red
kidney beans cooked 500 gm.
Sugar
1 tsp
Tomato
sauce 2 tbsp.
Method
of preparation
Peel
and chop the onion into dices of 1 cm. Cut the capsicum, remove the
stalks and seeds and cut to small dices. Chop the garlic cloves also.
Heat
oil in a pan at medium flame. When hot add onions and saute stirring well
till the onions become soft and translucent. Add garlic, red capsicum,
chilli powder, paprika powder, and cumin seed powder and stir together and
allow to cook for 5 minutes stirring frequently.
Now
add the minced meat and mix with the other ingredients in the vessel.
Stir frequently while cooking and break the lumps of minced meat using a
spatul6. Now raise the heat to medium and cook till the minced meat
becomes dry or somewhat dried.
Now
pour the beef stock to the fried beef, add the chopped tomatoes and stir well.
add 1 tsp dried marjoram, sugar salt and pepper, tomato sauce and mix
well.
reduce
heat and allow to simmer for 30 minutes with closed lids. stir the entire
chilli con occasionally to prevent it from sticking to the bottom of the vessel
and burning. add enough water if needed. it must have a thick
consistency.
now
add cooked kidney beans to the chilli con carne, mix well and allow to boil,
redue the heat and allow to simmer for a further 15 minutes. add salt and
pepper if needed. remove from heat, close the lid and allow to stay till
serving
serve
along with boiled rice.
