Banana
(plantain) stir-fried / ethakkai mezhakkupuratti
Ingredients
Unripe
banana outer skin removed with a peeler – 3 nos.
Coconut
cut into small squares ½ cup
Green
chillies split 5 nos
Red
chilli powder 1 tsp
Turmeric
powder ½ tsp
Salt
to taste
Oil
2 tbsp.
Red
chillies broken into pieces 3 nos.
Mustard
seeds 1 tsp
Urad
dal 2 tsp
Curry
leaves 1 sprig
Preparation
Heat
2 tbsp. oil in a pan, add mustard seeds and urad dal and allow to splutter, add
coconut pieces and stir well. Now add green chillies and curry leaves an sauté
for a while. Add banana pieces, stir
well, add red chilli powder, turmeric powder and salt mix together. Add a cup of water to it mix all the
ingredients together, close the lid of the pan and cook on medium flame till
all the water is evaporated and the desired consistency is achieved. Drizzle one tbsp. oil over the bananas and
mix gently and remove from heat.
Sprinkle
pepper powder if desired.
Serve
warm along with rice preparations.
