Arancini


Arancini is risotto balls. It can be made of leftovers from the day before.  Arancini is delicious and using leftovers make the preparation easy.

 

Ingredients for Arancini

Risotto 2 cups 

Cubes of cheese 12 nos.

Eggs 2 nos.

Bread crumbs 4 tbsp.

Salt to taste 

Oil for frying 

Method of preparation of Arancini 

Add salt to the risotto if needed and mix together.  Take a spoonful of the risotto in your palm and spread it flat, place a cube of cheese in the middle and fold the sides and form a risotto ball.  

Beat the eggs in a bowl and dip the risotto balls first in the egg and then in the breadcrumbs. Repeat this process once more that the the bread crumbs form a thick rind.

Heat oil in a pan and deep fry the Arancinis on low heat.

Serve along with salad.
