Aloo-Baingan
Masala/Potato-Brinjal Masala
Ingredients
Potatoes
200 gms
Brinal
200gms
Onions
chopped 2 nos
Tomatoes
chopped 3 nos
Cumin seeds
½ tsp
Ginger
chopped ½ tsp
Garlic
chopped ½ tsp
Chilli
powders ½ tsp
Turmeric
powder ¼ tsp
Coriander
powder 1 tsp
Chicken
masala powder 1 tsp
Coriander
leaves to garnish
Salt to
taste
Water 1 cup
Oil 2 Tbsp
Preparation
Wash, peel
and cut the potatoes into small wedges and keep immersed in lightly salted
water. Cut the Brinjal and keep immersed
in salted water. Otherwise they will
turn colour.
Heat oil in
a pan, add cumin seeds and allow to splutter.
Add chopped ginger and garlic and saute well, add finely chopped onion
and saute till golden brown, add chilli powder, turmeric powder, chicken masala
and coriander powder and saute for a minute and immediately add the chopped
tomatoes and saute well till all turns to a fine paste. Add the vegetables, salt and saute for a
while till the gravy and vegetables are mixed together. Add water, mix well and cook on low flame
till well cooked. Garnish with coriander
leaves and serve.
