Thairu Sadam/Curd Rice/Yogurt Rice
Thairu Sadam is a favourite dish among South
Indians. It was usually made using
freshly made Yogurt or Curd.
IngredientsRice 1 cup
Curd/thairu 150 ml
Milk 200 ml.
Butter 1 tbsp
Asafoetida powder ¼ tsp
For seasoning
Vegetable oil 1 tbsp
Ginger finely chopped 1 tsp.
Mustard seeds 1 tsp
Red chillies (broken into pieces) 5 nos
Small onions chopped 1 tbsp
Curry leaves 1 sprig
Salt to taste
Preparation
Boil and cook the rice adding enough water and
¼ tsp salt. When cooked drain the excess water and add the milk, asafoetida
powder to it and allow to cool. When
cooled add the curd and salt and mix well.Heat oil in a deep pan, add the mustard seeds and allow to splutter. Add shallots, ginger, red chillies, curry leaves and saute well.
Pour the seasoning over the rice and serve.
Curd for the preparation can be made by fermenting
milk. For that take 500 ml milk I a jar,
add 100 ml natural yogurt to it, mix together with a spoon and keep at a warm
place overnight. In cold climate it may
take 24 hours to ferment. Remove the
water from the curd and use.
