Mukkala pulusu (mixed vegetable)

Ingredients

Vegetables cut into 2-3 cm cubes
800 gm
Pumpkin, drumsticks, potato, brinjal
800 gm
Carrots, unripe papaya
800gm
Small onions (shallots)
10 Nos (a small onion)
Tomato (chopped)
200 gm
Tamarind paste
2 tsp
Turmeric powder
¼ tsp
Dried red chillies
4 Nos
Jiggery / sugar
2 tbsp
Salt
 To taste

 

Ingredients for the masala powder

Fenugreek seeds
1 tsp
Black gram/Urad dal
2 tsp
Bengal gram/chickpea splits
2 tbsp
Coriander powder
1 tsp
Red chilli powder
½ tsp

Dry roast all the above ingredients and grind to a fine powder.

Ingredients for seasoning

Oil
1 tbsp
Mustard seeds
½ tsp
Garlic sliced finely
5-8 cloves
Dried Red chilli
1-2 Nos
Curry leaves
1 spring

 

Preparation

Add the vegetables, shallots, tomatoes, green chillies, turmeric powder and water into a vessel and cook till the vegetables are cooked. Add tamarind paste, salt, jiggery and cook further at reduced heat. Add the ground masala powder to it, mix well, cook for a further 5 – 10 minutes.

For the seasoning heat oil in a pan, add mustard seeds and allow it to splutter. Add urad dal, fenugreek seeds, red chillies, garlic, curry leaves and cumin seeds and fry for a minute. Add asafoetida powder, mix well and pour into the pulusu curry.

Mix well and take off from the heat.

Decorate with Coriander leaves.
