Mukkala pulusu (mixed vegetable)

Ingredients
Vegetables cut into 2-3 cm cubes

Pumpkin, drumsticks, potato, brinjal

Carrots, unripe papaya

Small onions (shallots)

10 Nos (a small onion)

Tomato (chopped)

200 gm

Tamarind paste

Turmeric powder

¼ tsp

Dried red chillies

Jiggery / sugar

2 tbsp

Salt

To taste

Ingredients for the masala powder
Fenugreek seeds
|
1 tsp
|
Black gram/Urad dal
|
2 tsp
|
Bengal gram/chickpea splits
|
2 tbsp
|
Coriander powder
|
1 tsp
|
Red chilli powder
|
½ tsp
|
Dry roast all the above ingredients and grind
to a fine powder.
Ingredients for seasoning
Oil
|
1 tbsp
|
Mustard seeds
|
½ tsp
|
Garlic sliced finely
|
5-8 cloves
|
Dried Red chilli
|
1-2 Nos
|
Curry leaves
|
1 spring
|
Preparation
Add the vegetables, shallots, tomatoes, green
chillies, turmeric powder and water into a vessel and cook till the vegetables
are cooked. Add tamarind paste, salt, jiggery and cook further at reduced heat.
Add the ground masala powder to it, mix well, cook for a further 5 – 10
minutes.
For the seasoning heat oil in a pan, add mustard
seeds and allow it to splutter. Add urad dal, fenugreek seeds, red chillies,
garlic, curry leaves and cumin seeds and fry for a minute. Add asafoetida
powder, mix well and pour into the pulusu curry.
Mix well and take off from the heat.
Decorate with Coriander leaves.
