Ingredients
for Egg Roast Kerala Style.
Eggs 8 nosOnion 5 nos
Green chillies chopped 5 nos (deseed them if you don`t want it too hot)
Ginger finely chopped 1 tsp
Garlic finely chopped 5-8 cloves
Chilli powder 2 tsp
Coriander powder 1 tbsp
Turmeric powder ½ tsp
Cumin seeds powder ½ tsp
Tomatoes chopped 4 nos
Oil 3 tbsp
Curry leaves 1 sprig
Salt as per taste
Preparation
of Egg roast Kerala style
Hard boil the eggs, shell it and keep it aside for later use.
Heat oil in a thick-bottomed pan, add the chopped onions and saute till it turns golden brown. Add green chillies ginger and garlic and saute well. Add chilli powder, coriander powder, turmeric powder and cumin seeds powder and stir well for a minute. Now add the chopped tomatoes, curry leaves and salt and cook for a few minutes stirring well till all the ingredients turns into a fine gravy. If needed add a little water. Now split the eggs carefully into two and add to the gravy and mix together.
Can be
served with rice, chappathi, appam and the like.
