Cucumber Tomatoes Soup served cold


Ingredients

Cucumber
1
Tomatoes
500 gm
Capsicum red colour
1 large
Vegetable stock or bullion
500 ml
Garlic cloves
2-3 Nos
Olive oil (vegetable oil)
2 tbsp
Tabasco
1 Tbsp
Red chillies
As per taste
Salt
To taste

Preparation
Deseed and clean the capsicum and cut into small dices. Chop peeled cucumber and tomatoes. Add the vegetable bullion to it. Crush the garlic cloves and add to it. Add tabasco and 1 tbsp olive oil to it. Now grind all together using a mixer grinder or stab mixer to a fine paste (Puree). Keep the soup for one hour in the fridge to cool it.

Before serving mix it with salt, tabasco and chopped chillies as per taste. Garnish with Cucumber pieces and mint leaves.
