Chickpea-tomato salad (diabetic)

Ingredients
Chickpeas (dried, you can also use canned chickpeas)
250 gm
Onion chopped
2 Nos
Garlic finely chopped
1 tsp
Capsicum green chopped
2 Nos
Green chillies finely chopped
2 Nos
Parsley (chopped)
2 tbsp
Mint finely chopped
2 tbsp
Lemon Juice
2 tbsp
Olive oil
2 tbsp
Tomato chopped
250 gm
Salt
To taste
Preparation
Soak the dry chickpeas for at least 8 hours in water. Wash and rinse it. Cook the chickpeas with enough water at medium heat until tender. Drain the excess water and keep aside. Now take a non-metallic bowl and mix chickpeas, onion, garlic, capsicum, green chillies, parsley and mint and mix well.
Mix olive oil, salt and lemon juice thoroughly. Pour over the salad mix and mix well. Mix the tomatoes and serve.
