Black-eyed Peas – Vegetable Salad


This Salad is rich in Protein and fibres and beautiful with vibrant colours.  It is very easy to prepare and delicious also.
Ingredients for black-eyed peas-vegetable salad.

Brocken wheat 100 gm.
Black eyed beans 200 gms.
Yellow, green and red capsicum 1 each
Onion (Chopped) 1 medium one
Coriander leaves (chopped) 1 tbsp.
Olive oil 2 tbsp
Mustard paste 1 tsp
Pepper ½ tsp
Salt ½ tsp (as per taste)
Lemon juice from one lemon (or vinegar – 2 tbsp)

Preparation of black eyed peas vegetable salad

Mix lemon juice, salt, pepper powder, mustard paste (senf) and oil together and mix well.  Now mix the cooked wheat, capsicum, beans (cooked black eyed peas), onion and coriander leaves in another bowl and add the lemon juice mix to it and mix together.  Keep it for one hour in fridge before serving.
