Birds nest (Kilikkoodu) (Malabar Kitchen)

Preparation
Cut the chicken into small pieces, wash and
drain it and keep aside. Boil the potatoes in a vessel adding enough water. When
cooked drain the water and allow to cool. Peel the potatoes and mash it and
keep aside.
Peel and slice the onions. Heat 2 tbsp. oil in
a pan and sauté the sliced onions. Add chopped ginger, garlic, green chillies
and curry leaves and sauté well. Add the pepper powder, and turmeric powder
salt and sauté for 2 minutes well. Add the chicken pieces mix well and cook
with closed lids. After 15 minutes remove the lid and cook till all the water
is evaporated. Add mint leaves and coriander leaves, mix well. Remove from heat
and allow to cool. When cool add the mashed potatoes, and mix well. Make small
balls out of it.
Now make a batter adding rice flour, water, a
bit of salt and a bit of turmeric powder. Dip each ball in this batter, roll it
over the semiya and deep fry in oil till golden brown.
