Unniyappam

Ingredients

Rice flour(roasted) 500 gm
Banana 500 gm
Jaggery/brown sugar 500 gm
Coconut cut into small
pieces 200 gm
Cardamom (ground seeds) 1
tsp
Ghee/butter 2 tbsp
Salt to taste
Oil to fry

Preparation
|
Make a syrup by melting
jiggery/brown sugar in a cup of water. Sieve the syrup and set aside to cool.
Mix rice flour, banana,
coconut pieces, cardamom, ghee, salt and the jiggery/sugar syrup in a bowl
and make a batter. Set aside at room temperature for an hour or two.
Heat oil in unniyappam pan
and pour the batter into the moulds and cook on medium heat till golden
brown. Turn each unniyappam over and cook till that side becomes golden
colour. Take out and allow to drain excess oil.
Delicious when with tea or
coffee .
