Uzhunnuvada
Ingredients
Urad dal
2 cup
Soak in water for 4 hours
Onions
1 tbsp
Chop finely
Green chillies
4 nos
Finely chopped
Ginger
1 tsp
Finely chopped
Curry leaves
1 spring
Finely chopped
Pepper
1 tsp
Ground
Baking powder
¼ tsp
Salt
To taste
Oil
To fry


Preparation

Grind urad dal adding very little water. Add as little water as possible that too much water may affect the consistency of the paste and make it difficult to bring vada in expected form. ( you can compensate the problem by adding urad dal flour – too much may affect the taste ).
Now add onion, ginger, curry leaves, pepper and baking powder into the paste and mixtogether.
Wet your hands with water, make a ball of the paste, flatten it with the other hand and make a hole in the middle. ( the hole in the middle of the vada helps it to fry evenly ).
Heat oil in a deep pan. Drop the vadas in oil and deep fry till golden brown.
Serve with sambar and coconut chutney.
