Roasted Zuccini
Ingredients for 4 servings
Medium sized Zucchini 4 nos.
tomatoes 2 nos.
mozarella 250 gm.
Olive oil 1 tbsp.
Salt to taste.
Garlic a few cloves.
Pepper a pinch.
Orengano a pinch.
Preparation.
Wash and dry the zucchinis.
Cut the zucchinis lengthwise into two and remove the middle part using a sharp edged spoon and place them on prepared oven tray.
Sprinkle them with salt and pepper powder.
Pierce the zucchinis with a fork.
Spread finely chopped garlic and olive oil over the zucchinis.
Preheat oven to 180 c. And bake the zucchinis for about 20 minutes and remove from oven.
Now chop/dice the tomatoes and mozarella and place over the zuccinis and sprinkle with orengano.
Place once more in the oven and bake for a further 10 minutes.
