LambMoussaka with Lentil

Moussaka is a special preparation mainly prevalent in the Middle East. Here is a recipe for moussaka with Lamb flesh and lentil.

Ingredients
Minced Lamb meat 250 gm.
Lentils soaked in water for at least 4 hours 500 gm.
Potatoes cooked and diced 500 gm.
Tomatoes chopped 500 gm.
Egg plant diced a large one
Onion chopped 1 large
Garlic sliced 1/2 tsp
Vegetable stock 200 milliliter
Olive or canola oil 2 tablespoons
Cinnamon powder 1 teaspoon
Yogurt 500 milliliter
Salt to taste
Orengano 2 tsp
Egg 1 nos

Preparation
Cook the lentils until soft adding salt preferably using a pressure cooker.
Heat oil in a pan and saute onion and garlic till the color changes.  Add the minced lamb and  aubergine (egg plant) and cook for a few minutes stirring well until the minced lamb reaches a brown color. Now add the lentils, tomatoes, potatoes,orengano, cinnamon powder and vegetable stock and mix well.
Cover the pan with a lid and allow to simmer on medium heat until the gravy thickens.
Now heat the oven to 250c.  Transfer the ingredients from the pan into an oven tray.
Beat the egg and mix it with the yogurt and spread it evenly over the lamb lentil mix and bake for 5-8'minutes or until the surface thickens and bubbles are formed over surface.
