Aloo Gobi (punjabi style) - Potato Cauliflower curry

Ingredients

potatoes 500 gms
cauliflower 500 gms
ginger finely chopped 2 tsp
red chilli powder 1 tsp
turmeric powder 1/4 tsp
chicken masala powder/garam masala powder 1/2 tsp
coriander leaves a bunch
salt to taste
vegetable oil 3-4 tbsp

preparation

cut the florets of the cauliflower, wash, rinse and keep aside.
wash and cut the potatoes into wedges.
heat oil in a pan and saut the potato pieces and chopped ginger in it for a few minutes.  now add the cauliflower florets and saute for a few minutes, stirring well.  add the chilli powder, turmeric powder, salt and mix well.  add one cup of water, mix together and close the lid.  allow to simmer till the potatoes and cauliflower is cooked well, remove lid add the Garam masala and allow the Aloo Gobi curry to simmer till the excess water is evaporated.
when it reaches the desired consistency remove from heat, sprinkle the chopped coriander leaves over it and serve.
serve along with chapathi, bread, naan or boiled rice.
