Egg Omelette Curry
To serve
something surprising to the friend or relative on visit or to the children
always reluctant to the recurring old curries may be enchanting.
Ingredients
Eggs 3 nos
Chillies finely chopped 2 nos
Ginger finely chopped 1 tsp.
Salt to taste
Pepper powder ½ tsp
Onion finely chopped 2 nos
Ginger finely chopped 1 tsp
Garlic finely chopped 5 cloves
Green chillies split 5 nos
Curry leaves 1 sprig
Coconut milk 2 cups
Grated coconut 1 cup
Vinegar 1 tbsp
Coriander powder 1 tsp
Chilli powder 1 tsp
Turmeric powder ¼ tsp
Cloves 5 nos
Cinnamon a small piece
Oil 2 tbsp
Mustard seeds ¼ tsp
Preparation
Beat the eggs in a bowl and add
chopped green chillies, ginger salt and pepper powder and mix well
Heat a flat pan greased with oil and
spread the egg mixture thinly and evenly over.
When the omelette is done roll it and cut it into small pieces.
Now grind all the spices together
adding some water and the grated coconut and keep aside.
Heat oil I a pan, add the mustard
seeds and allow to splutter. Add chopped
onion, ginger, garlic green chillies and curry leaves and sauté well till the
onion becomes golden brown.
Now add the ground spice coconut mix
to it and sauté well for a few minutes.
Add salt and vinegar and coconut milk and omelette pieces and remove
from heat.
