Basil leaves with Strawberries
Ingredients
Milk – 500 ml
Eggs – 4 Nos
Sugar – 140 gm

Lime/Lemon – 1 Nos

Vanilla sugar – 5 gm
Vinegar (Italian) Aceto Balsamico
Strawberries – 500 gm
Preperation
Separate the yellow from the eggs and give in
a metal bowl. Add 100 gm sugar and whip
it to a fine cream. Boil the milk and add to the whipped eggs whipping
continuously. Boil water in a pot, place the metal bowl over it (steam bath)
and whip till the milk-egg mix becomes thick (10-20 minutes). Keep it in the
fridge for an hour and allow to cool.
Wash and dry the lime and extract the zest.
Wash the basil leaves, drain it and allow to dry spreading them on kitchen towel
or tissue paper. Give the basil leaves, lemon zest and vanilla sugar and 50 ml
milk in a mixer grinder and grind well.
Now mix the basil paste with the ice mix and
place it in the ice maker for an hour. Otherwise if you have no ice maker place
the ice in the deep freezer for 3 hours. After each 30 minutes take it out and
mix well and replace in the freezer. Otherwise ice crystals may build up in the
ice.
Caramelise 50 gram sugar, mix the Italian
vinegar and cook for 5 minutes till it becomes a asirup. Wash, dry and cut
strawberries into pieces, place them in serving bowls, serve the ice over the
strawberries and sprinkle the „Aceto Balsamico“ (vinegar) over it.
Decorate with basil leaves.
