Ingredients

Rice 600 gm
Black gram ( urad dal / uzhunniparippu) 200 gm
Fenugreek seeds 1 tsp
Salt to taste
Oil to grease the pan

· 200 gm black gram ( uzhunnuparippu) (urad dal)
· 1 tsp fenugreek seeds ( uluva)
· Salt to taste
· Oil to grease the pan
· Preparation
· Take water in a bowl and soak rice and black gram overnight.
· Grind them in a mixer to a fine batter. Leave it at a warm place for leavening for about 5 to 12 hours.
· Leavening time depends on climatic conditions and the grade of leavening lends dosas special taste and tenderness. (for example dosas made after 5 hours leavening tends to be a little bit harder and sweeter as dosas made after 10 hours leavening, which are softer and fluffy.
· Heat a thick bottomed, flat, non-stick pan grase it with oil .
· Spread a tbsp of batter evenly in the pan and cook for 1-2 minutes without covering the pan.
· Turn the dosa over and cook the other side also
· Serve hot with sambar chutney or chicpea curry.
