Butter Chicken
Ingredients
Chicken
(without bones and skin) 1 kg.
Lime juice 1 tbsp
Chilli powder 1 tsp
Yoghurt 250 ml
Oil 50 ml
Onions (finely chopped ) 2 medium size
Tomato ketchup 250 ml
Garlic paste 2 tsp
Ginger paste 1 tsp
Coriander powder 2 tsp
Cumin powder ½ tsp
Turmeric powder ¼ tsp
Cardamom 10 no’s
Cloves 5-8 no’s
Cinnamon a small piece
Pepper ½ tsp
Butter 20 gm
Salt to taste
Coriander leaves to garnish

Preparation
Take a deep
pan and mix chicken pieces, lime juice and chilli powder and allow to marinate.
Roast
cardamom, cloves, cinnamon and pepper together gently in a pan and grind them
gently. Mix this powder, coriander powder, cumin powder, turmeric powder with
yoghurt. Add this mixture to the marinated chicken, mix well and allow
marinating for another 30 minutes.
Heat oil in
a pan and fry onions till golden brown. Add ginger and garlic paste and fry for
a minute or two. Add the chicken pieces from the marinade paste and fry it for
5 minutes stirring constantly. Now add the remaining marinade paste, tomato
ketchup, and cook till the chicken becomes tender.
Melt the
butter in a pan and pour it over the cooked chicken.
Serve hot
garnishing this with fresh coriander leaves.
Goes good
with naan.
